
Happy Friday all!! It is an absolute ick day here… dark, gloomy and pouring!!! The good thing, I’m going to AC to celebrate my soon to be sis in law! Ok, now take a minute to send the good luck gambling vibes my way 😉 I’ve got a really flavorful, simple and summer inspired Balsamic Chicken Salad recipe for you! I’m so excited that I got to make this for my friend Nikki, go ahead take a minute to check out her fab blog My Life My Way! Its so easy to make, I mean really the only thing yo have to cook is the chicken then cut up some roasted peppers, red onion and parsley, throw it all together with balsamic vinegar! Serve over some baby mixed greens…beautiful colors and delish!!!!
Balsamic Chicken Salad

1 1/2- 2 lbs thinly sliced chicken breast
1 red onion, thinly sliced
1 heaping cup sliced roasted red peppers
a handful of parsley, rough chopped
1/2 cup balsamic vinegar
2 Tbsp olive oil
salt & pepper
Season the chicken with salt and pepper. Grill for a few minutes, depending on thickness, on each side until the chicken is cooked through. Allow to rest a few minutes before cutting into a large dice.


While the chicken is cooking cut up the onion, roasted peppers and parsley. Toss into a bowl along with the diced chicken, olive oil and balsamic vinegar. Season with salt and pepper.
