Chicken Salad with Avocado, Applewood Smoked Bacon and Tomato makes for a perfect simple lunch. Tons of great flavor in this one!
I am a pretty big fan of chicken salad… no not the one saturated in mayo with nothing else present… chicken salad can be flavorful and a little bit lighter then the traditional! I have been on quite the avocado kick lately so I figured why not eliminate the mayo completely and replace it with the wonderful creamy avocado! I mean, c’mon who is going to miss all those calories and not good for you fats?!?! I had found an amazing applewood smoked bacon the other day and figured it would add a perfect amount of smokiness! Throw in a Jersey ripe tomato and voila, a delicious and super simple chicken salad!
Chicken Salad with Avocado, Applewood Smoked Bacon and Tomato
1 roasted chicken, meat removed and rough chopped
2 ripe avocado
1 tsp garlic powder
juice from 1/2 a lime
6-8 slices applewood smoked bacon, cooked and rough chopped
2 tomatoes, diced
In a bowl add the “meat” of the two avocados and mash with a potato masher until creamy. You can certainly leave it a little chunky as I did, I like getting a few big bites of the avocado.
Add the lime juice, garlic powder, salt and pepper and mix to combine. Toss in the chicken, chopped bacon and diced tomatoes. Salt and Pepper to taste. I served this beautiful chicken salad on whole wheat toast with a couple leaves of Romaine lettuce.
