Lightened Up Buffalo Chicken with Roasted Ranch Turkey Bacon Potatoes

Lightened Up Buffalo Chicken & Roasted Ranch Turkey Bacon Potatoes… All the flavors you love with a buffalo chicken wing with a healthier twist. This is a flavorful, easy weeknight meal you are going to love!

Step by step instructions to create a fabulous meal! I think i’ve mentioned it before but ever since pregnancy number 2 I have had a new found love for anything with buffalo sauce on it! When you think of buffalo chicken, “light” is definitely not a word usually associated with the dish. Generally you’ve got a chicken wing coated in flour then deep fried.

A healthier buffalo chicken can be done and it is simple and delicious!!! Chicken breasts cut into strips and grilled then coated in a simple buffalo sauce. I served these up with some delicious roasted ranch & turkey bacon potatoes! Can we say yum!!! Oh yes, then because we need our greens, some steamed broccoli too! I dipped my chicken into a bit of light ranch dressing because, well bleu cheese just doesn’t do it for me.

serves 4

3 or 4 boneless skinless chicken breasts, cut into strips
1/2-3/4 cup Franks Red Hot
2 Tbsp unsalted butter

2 lbs red potatoes
4 Tbsp ranch seasoning (I used Hidden Valley Ranch Seasoning)
4 slices uncooked turkey bacon
olive oil

We’ll start with the potatoes because they take a bit longer to cook. These are super simple and pack a ton of flavor! Cut the potatoes into quarters and give the bacon a rough chop.

Place the potatoes and bacon onto a lined baking sheet and drizzle with a couple Tbsp of olive oil and the ranch seasoning. Cook at 400 degrees for approx 35-45 minutes, until golden brown and tender on the inside.

While the potatoes are cooking you can go ahead and start the chicken. Using a grill pan, cook the chicken strips for about 4 minutes per side or until the juices run clear.

In a small pot, over low heat, warm the Franks Red Hot and butter. Toss the cooked chicken in the buffalo sauce. There you have a healthier and much faster buffalo chicken!
