
I do love a traditional chicken salad… you know the super basic one of chopped chicken, celery, carrots and mayo but I mean theres better for sure. One of my favorite chicken salads is the Waldorf Salad. There are of course variations like the one I made this morning to bring to my moms later. To lighten it up a bit I used non fat plain Greek yogurt, for some sweetness there are the grapes, a little tartness from a granny smith apple and crunch from slivered almonds.
Chicken Waldorf Salad
1 cooked rotisserie chicken
1 granny smith apple, peeled and diced
handful of slivered almonds
a couple handfuls of red seedless grapes, cut in half
juice of 1/2 a lemon
approx 8-10 oz of non fat greek yogurt
This is so simple to make and so full of flavor!!
Remove as much meat from the chicken as you can and give it a rough chop.
In a bowl toss together the chicken, grapes, apples, yogurt, lemon juice and almonds until well combined.
Serve over lettuce, in hollowed out cucumbers or in a sandwich.
*Depending on the size of the chicken and how much meat you get off it you may need more or less of the yogurt. You want it just moistened not sopped in it*
