Buffalo Chicken Meatballs

Buffalo Chicken Meatballs. A great appetizer that packs a great kick! So much easier then frying up wings with all the great taste.

I love me some buffalo sauce! The funny thing is before having kiddos I was never really a fan of spicy foods then when pregnant and ever since the love of a little spice has stuck! Buffalo sauce is such a simple one to make with just 3 ingredients and I usually have a mason jar full in the fridge ready to go. I made these Buffalo Chicken Meatballs a couple weeks ago for an appetizer and they turned out fantastic!!! These come together easily and are definitely less calories then fried wings.

Lean ground chicken, red onion, celery and carrots along with a little salt, pepper and garlic powder make up these simple meatballs. I pan fried them just until golden on all sides then finished them in the oven. The sauce is so easy! Warm butter, Franks Red Hot Sauce {or something similar} and garlic powder in a pot. Pour that over the meatballs and thats it! A great party appetizer whether it be a summer BBQ or football season! Love these!

Buffalo Chicken Meatballs

Ingredients
  • For the meatballs:
  • 3 Tbsp olive oil
  • 3 Tbsp finely diced red onion
  • 1/4 cup finely diced celery
  • 1/4 cup finely diced carrot
  • 1 lb lean ground chicken
  • 1 tsp garlic powder
  • 1 egg
  • 3/4 cup breadcrumbs
  • For the sauce:
  • 1/2 cup red hot sauce
  • 4 Tbsp butter
  • 2 tsp garlic powder
  • Serve along with celery & carrot sticks as well as ranch or bleu cheese dressing
Instructions
  1. In a saute pan, over medium heat, add the 3 Tbsp olive oil, red onion, carrot and celery. Cook until softened. Stir in 1 tsp garlic powder and a little salt & pepper. Allow to cool.
  2. In a bowl add the ground chicken, egg, breadcrumb and the veggies. Mix until evenly combined. Form into golf ball sized meatballs.
  3. In the same pan you cooked the veggies, add a little drizzle of olive oil just to coat the bottom of the pan. Cook the meatballs until lightly golden brown on each side. Add the meatballs to a baking dish.
  4. Bake the meatballs at 385 degrees for about 10 minutes until the meatballs are cooked through.
  5. In a pot add the red hot sauce, butter and 2 tsp of garlic powder to a pot. Simmer until warmed through. Coat the meatballs and serve.
