
First off, I want to thank all of you for continuing to follow along as I work through this 24 Day Challenge to drop the lbs and get healthier. Want to learn more about what I’m doing, check out this post and see what I’ve done so far, what has been helping me and what I’m working on now. I hope that sharing my story will help to inspire others to make some changes to lead a healthier life (and no that doesn’t mean I am giving up indulgences, its about making more smart choices). Tonight I have another clean dish for you. Its very simple and quick to make and you can prep this the day before to make for a really quick weeknight meal. Pounded out chicken breasts rolled with pesto, baby spinach and cooked brown rice. The rollintini is then browned on each side and finished off in the oven with a it of chicken broth.
Chicken Rollintini with Pesto, Baby Spinach & Brown Rice
4 thin sliced chicken breasts
6 tsp pesto
2 cups loosely packed baby spinach
1 cup cooked brown rice
2 cups chicken brothPound out the chicken a little thinner. Spread about 1 1/2 tsp of pesto on one side of the chicken.

Pile the baby spinach and brown rice onto the chicken, on the end closest to you.

Roll up the chicken and use toothpicks to secure the ends and center. It gets a little messy, some rice falls out, just roll with it.

I seasoned the rollintini lightly with a garlic powder, salt and pepper. Then in a pan, over medium high heat, brown the chicken on all sides then place into a baking dish with the chicken broth.
Finish cooking the chicken in a 375 degree oven for 6-8 minutes depending on the thickness of the chicken.
