Zucchini & Carrot Pancakes

Let the clean eating continue! I am enjoying reworking foods I love to turn them “clean”. A little while back I picked up a thing of Garbanzo Bean Flour (aka chickpea flour- can be found in the baking aisle at the grocery store) with the intent of making panelles. Since that hasn’t happened yet figured I’d think of something different to do with it, so came up these! Super simple to make and filling enough to have a few as the main part of your meal. Grated zucchini and carrots, the garbanzo bean flour, an egg and seasoned simply with garlic powder, fresh parsley, salt and pepper. These are cooked in a dry non stick pan, no oil necessary! Will definitely be making these again during the 24 Day Challenge i’m doing.

Clean Eating :: Zucchini & Carrot Pancakes
makes 8

1 zucchini, grated
1 carrot, grated
1 egg
3/4 cup garbanzo bean flour
1 handful of parsley, chopped
2 tsp garlic powder
salt & pepper

After grating the zucchini and carrots give them a squeeze to remove some of the excess water from the zucchini.

Place all the ingredients into a bowl and mix to combine.

Heat up a large non stick pan over medium heat. Add the mixture by the Tbsp full into the pan and flatten out slightly. Brown to a nice golden color on each side until cooked through. If your non stick pan isn’t working well, use just a spritz of cooking spray.

These are also delicious with a little mashed avocado over top, it was my breakfast the day after 🙂

    Those look yummy! My guy is big on Zucchini but hates pancakes, maybe these will change his mind! Thanks for the great recipe.
