Every Sunday night or Monday morning I sit down to come up with my dinners for the week. I find it so helpful for several reasons:
- I only have to hit up the store once a week- this is really for my own sanity because my boys really like to get on each others nerves at the store which in turn makes shopping unpleasant for me.
- I don’t have to think. You are much more likely to order take out or whip something up that isn’t necessarily a healthier choice if you have to scramble during the week after the busy day. I find it helpful to know what i’m making and knowing that I have it all on hand and ready to go.
- I can keep the variety up. If I sit down and search some of my favorite food blogs for ideas I can keep things “fresh” and not get stuck in a rut of the same handful of meals.
- By having a list of meals, you can easily put together your grocery list so you don’t forget anything.
Of course there is still breakfast and lunch…. I have a few staples I goto for myself… salads, sliced turkey, avocados, fruits, whole grain/multi grain bread. Breakfast I am super simple with fruit and oatmeal, a yogurt with a piece of fruit, toast with natural peanut butter & a little of grandmas jam.
For the boys… I always have on hand some whole grain breaded chicken chunks, organic hot dogs, organic mac & cheese, broccoli, tons of fruit, they love shrimp and anything pasta. They’ll also have leftovers from the previous nights diner.
Heres what I’ve got planned for this week….
(yes, a lot of chicken but they vary so much there is no getting bored)
Monday: Mexican stuffed potato (ground chicken, black beans, corn, tomatoes, lettuce & Greek yogurt cilantro cream)
Tuesday: chicken, onions & peppers kabob with pineapple brown rice
Wednesday: talian style stuffed cabbage (cabbage, ground chicken, ricotta, mozzarella- sauce, baked)
Thursday: braised chicken with artichoke hearts & olives
Friday: leftover night
So go ahead, browse through my blog, other blogs or foodie sites, pick some things that look good and prep for the week, the organization is really helpful!

Meal planning makes such a difference in the quality of meals we eat. It also helps us save so much money.
If you’re looking to switch things up with your baked potatoes…you should try using the same toppings on a sweet potato. It’s delicious! I also cook them in the crock pot all day so dinner is ready the second we walk through the door.
