
Sometimes a delicious salad dressing can make a world of difference. This one happens to be a favorite of mine and really is so easy to make that you won’t ever have to buy store bought again! A handful of ingredients and a mason jar are all you need! I don’t follow the traditional ratio of oil to vinegar simply because I prefer more vinegar, or any acidity for that matter, then oil. This dressing is even better after sitting to meld in the fridge for a couple days! Fresh basil, shallots, olive oil, balsamic vinegar, salt & pepper… That’s it!
Shallot & Basil Balsamic Vinaigrette
1 small shallot, diced
~ 5 basil leaves, sliced or rough chop
3/4 cup balsamic vinegar
1/4 cup olive oil
Salt and pepper to taste
