Thanksgiving Leftover Casserole

What would a holiday be without some delicious leftovers? Sometimes you have juts  little bit of each thing but don’t worry you can absolutely make a meal out of it!!! Heres how I stretch it out…. my Thanksgiving Leftover Casserole.

I’m doing things a little backwards here… hitting a really delicious Thanksgiving Leftover Casserole recipe before my Thanksgiving day recipes {no worries, they are coming}. I couldn’t help myself, all this holiday talk had me craving some Thanksgiving eats! So, I went ahead and made the components for this dish and used a store bought roasted turkey breast…. I  linked back to my Thanksgiving posts from last year to get you some ideas for the actual day.

I decided to go ahead and put some of my favorites together and turn them into a one dish meal and YUM, it turned out great!!! Bonus basic gravy recipe too! Really the idea of this can be done anytime of the year with any number of leftovers you happen to have around.
{keep in mind the measurements do not need to be exact, this is a really flexible recipe}Thanksgiving Leftover Casserole

For the gravy:
{makes approx 4 cups} 
4 Tbsp butter
3 Tbsp finely diced shallot
4 Tbsp flour
32 oz turkey or chicken broth
1 Tbsp gravy master (found near jarred gravy)
fresh chopped parsleyFor the Casserole:
2 cups leftover chopped green beans
2 cups leftover roasted potatoes
3 cups leftover diced turkey
3 cups leftover stuffing

Start by making the gravy, we will use half in the recipe and half for topping the casserole when served.

In a saucepan, over low heat, melt the butter then add in the shallots and cook until softened. Whisk in the flour until smooth and allow to cook for a couple minutes to cook out the raw flour taste.

Whisk in the broth and continue to whisk until well combined and lump free. Add in the gravy master and season with salt and pepper. Bring to a boil then lower to a simmer. Simmer for 10-15 minutes until slightly thickened. Stir in some fresh chopped parsley. Set the gravy aside.

Preheat the oven to 375 degrees.

Add the turkey, green beans and potatoes in a bowl . Add in half the gravy and stir until combined. Pour into a large baking dish.

Spread the stuffing over the top. Bake for about 30-40 minutes until bubbly and the stuffing is lightly golden. Serve the remaining gravy on the side to pour overtop.
