Funny story. I was experimenting with coming up with a corn pudding type recipe and well it didn’t turn out to be corn pudding. The great part, it ended up being a really delicious Southern Style Cornbread!!! What makes it “Southern Style”? This cornbread is not sweet, light and fluffy like a cake. Southern style cornbread is dense and made up of mostly cornmeal rather then flour. This makes for a perfect side dish to anything from BBQ to roasted chicken to beef stew.

- 1 1/2 cups low fat milk
- 1/2 cup of light cream
- 3 eggs
- 5 Tbsp butter, melted & cooled
- 3 cups stone ground cornmeal
- 1/2 cup flour
- 1/4 cup sugar
- 2 tsp baking powder
- 1 Tbsp salt
- 1 tsp pepper
- 1 can corn, drained
- Preheat your oven to 350 degrees.
- In a bowl whisk together the milk, cream, eggs and butter until well combined.
- In another bowl mix together the cornmeal, flour, sugar, baking powder, salt and pepper.
- Add the dry ingredients into the wet mixture until mostly combined.
- Stir in the can of corn until evenly combined.
- Prepare a 9×13 baking dish with a little non stick spray. Pour the cornbread mixture into the pan and bake for approx 45 minutes. It should be lightly golden around the edges and if a toothpick inserted it should come out clean.
