Sure, tomorrow is March 25th and yup we are expecting snow, again! I am so over it, I just want warm weather, eating outside and more meals like this! The concept is simple, the ingredient list short, the flavors phenomenal! Saturday late afternoon, we actually did luck out and we were able to enjoy dinner on the deck as the sun was beginning to set. This Pear, Arugula, Prosciutto & Herb Cheese Tortilla Pizza was absolute perfection along with a glass of chilled Chardonnay and the warmth of the sun!
The flavors all compliment each other and the different textures keep it interesting! Crisp tortilla slathered with herb cheese {I used Rondele by President Light Garlic & Herbs Cheese}, topped with sweet pear and baked on a pizza stone until golden. To finish this is simple pizza off I added a mound of arugula, bits of crisp prosciutto, a drizzle of olive oil and some fresh cracked pepper. As we sat outside and I sipped my wine, while the boys bounced around yelling that this was the best day ever and I turned to Steve and said, “I’m pretending we’re in Italy”.
I need more of these days, the snow must stop the sun needs to shine, I need to hear birds chirp, picnics at the park and trips to the beach followed by Hoffmans {Jersey people, this is the best ice cream ever!}. I’m done with feeling the need to cook giant pots of soups and stews to warm us on the frigid days. I want the whip out the grill, I want bright colored meals… I want more meals just like this Pear, Arugula, Prosciutto & Herb Cheese Tortilla Pizza!! For now, i’ll keep pretending.
- 6 tortillas {i used whole grain}
- Rondele by President Light Garlic & Herbs Cheese
- 4-6 oz prosciutto
- 2 pears, sliced thin
- arugula
- olive oil
- fresh cracked pepper
- Preheat your oven to 375 degrees. Place the prosciutto on a parchment lined baking sheet and bake for approx. 10 minutes until nice and crisp. Place onto a paper towel to absorb any excess oil.
- Crank the heat to 500 degrees. If using a pizza stone like I did, let the pizza stone heat up for an additional 10 minutes after the temp is reached. This will nicely crisp up the tortilla. If not, then heat up a baking sheet and sprinkle with flour before placing the pizza on there.
- Slather a layer of the garlic and herb cheese on the tortilla. Add on a layer of sliced pear. Pop in the oven for approx 8 minutes until the tortilla is crisp and the pears just slightly golden.
- Remove from the pizza from the oven, top with arugula, some roughly broken up pieces of the crisp prosciutto, a light drizzle of olive oil and finish with fresh cracked pepper.
