Chicken Patties with Sun Dried Tomatoes, Artichoke Hearts & Spinach

I never thought I’d be the type of person that would chose a chicken burger over a beef burger but here I am in love with the flavors of these Chicken Patties with Sun Dried Tomatoes, Artichoke Hearts and Spinach and not missing the beef at all! These patties are incredibly juicy and in every bite you get a little bit of all the goodness! These are easy to make and freeze great, so go ahead and make a double batch because you will no doubt want them again asap! 

I’ve had a couple different store bought chicken patties and they have not been very good! Either they are bland or formed so tightly that they cook up tough and dry. Make your own and you too will be hooked! I’ve made several different versions but I really think one is my favorite! Oil packed sun dried tomatoes, marinated artichoke hearts, baby spinach {even better because it was straight out of the garden} and garlic are all very finely chopped in a food processor. All of that is gently mixed into the ground chicken, seasoned with salt and pepper and they are all ready for the grill!

Chicken Patties with Sun Dried Tomatoes, Artichoke Hearts & Spinach
Ingredients
  • 3 lbs lean ground chicken
  • 6 oz oil packed sun dried tomatoes plus 2 Tbsp of the oil
  • 12 oz jar marinated artichoke hearts, drained
  • 4 cloves garlic
  • 4-5 handfuls of baby spinach
  • salt & pepper
Instructions
  1. Place the sun dried tomatoes along with 2 Tbsp of the oil, artichoke hearts, garlic and spinach into a food processor. Pulse until finely chopped but not so far as to make it a paste.
  2. Gently stir the mixture in with the ground chicken and season with salt and pepper.
  3. Form into approx 1/2 lb patties.
  4. Grill over a medium high flame for about 5 minutes per side {timing will bay depending on your grill of course}.
  5. These are great topped with a slice of fresh mozzarella or provolone as well.
