Last week Jack had his Pre K graduation and with that comes end of the year presents for the awesome teachers thats were so great to him all year long. I want my gifts to have some meaning behind them and know that I really am appreciative of what they do. I love homemade gifts and gifts that can be consumed! Who needs another #1 teacher coffee mug hanging around? Who would love a platter of home baked pound cakes, banana nut muffins and cookies?!?! Yup me too! These Chocolate Oatmeal Chocolate Chip Cookies were on that platter and we got to enjoy a dozen of our own {you know for quality assurance purposes}. They are a GREAT cookie!!!
I have to pat myself on the back here for a second, I have certainly improved in my cookie recipe making recently. I not only gave these Chocolate Oatmeal Chocolate Chip Cookies to Jacks teachers but I also brought them up to my father in laws last weekend… HUGE HIT!!! I love the double dose of chocolate, the cookie itself and the chips throughout. Now, that oatmeal… I really love oatmeal in a cookie, I think it adds a nice chew and heartiness to the cookie!!
- 2 cups flour
- 2 cups rolled oats
- 1 Tbsp baking powder
- 2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsweetened cocoa powder
- 2 sticks unsalted butter, room temp
- 3 eggs
- 1 Tbsp vanilla extract
- 1 1/2 cups brown sugar
- 1/2 cup granulated sugar
- 2 1/2 cups chocolate chips
- Preheat your oven to 375 degrees.
- In a large bowl, using a hand mixer, cream together the butter, brown sugar and granulated sugar until well combined.
- Add in the eggs and vanilla and mix until well combined, light and fluffy.
- In a small bowl mix together the flour, baking powder, baking soda, rolled oats, salt and cocoa powder.
- Add half the dry mix into the wet mix and mix until mostly combined. Add the remaining dry ingredients in and again mix until just mostly combined {you don’t want to over mix}.
- Add in the chocolate chips and stir in with a spoon or rubber spatula.
- Using a small cookie scoop, scoop out the dough about an inch apart onto a parchment lined baking sheet.
- Bake for apron 12-14 minutes. Cool slightly on the pan then cool completely on a cooling rack.
- Repeat until all the dough is baked off.
- Yields approx 5-6 dozen {don’t worry you’ll easily find friends to share with, if you decide to share at all [b]wink wink[/b]}
