Black Bean, Salsa and Cheddar Taquitos with an Avocado Dipping Sauce

I missed you guys!!! Me and the fam spent the long weekend in Amish Country PA and had a great time!!! We ate a ton of delicious food and had a blast at the Crayola Experience, Dutch Wonderland and Sesame Place {well ya that stuff was obviously to keep the kids happy lol}. We did a horse & wagon ride to a local dairy farm and I loved that we got to teach the boys a little bit about how we get milk from the cows, a giant truck picks up the milk and then brings it to a factory to be made into all sorts of products we get at the grocery store. A great lesson in my opinion… plus there was fresh cookies and lemonade to enjoy as well! Anyhow, I do enjoy a break now and then but I really missed being in the kitchen! 

I just made these really delicious Black Bean, Salsa and Cheddar Taquitos with an Avocado Dipping Sauce to enjoy something a little lighter then fried chicken! Corn tortillas rolled up with sharp white cheddar, black beans, salsa and scallion. Pop them in the oven for 15 minutes and thats it for the taquitos! The dipping sauce goes along perfectly! Avocado, sour cream, red onion, scallion, garlic powder, chili powder and salt. Perfect pair these taquitos and dipping sauce… great as a snack, lunch or dinner! Hey, these would be a great addition to your Sunday football spread too!! Hope you guys enjoy these are much as I just did!

    That sounds like such a fun long weekend in PA. These taquitos look and sound amazing! I love mexican and spicy foods like this. They are always so tasty! I may have to try this one soon. Thanks for sharing!
