I am seriously on a HUGE soup kick lately! I don’t know what it is but I am really enjoying coming up with new soup recipes and of course devouring bowls full as well! This Slow Cooker Creamy Tomato Basil Soup with Tortellini really hit the spot tonight! Its so incredibly easy to make too, last night before bed I took about 5 minutes to get everything in and the slow cooker turned on. This morning I woke up to a fabulous smelling kitchen and a delicious soup! A couple small steps before it was finished and I ended up with this flavorful and satisfying Creamy Tomato Basil Soup. 

This recipe is so simple and the slow cooker really does most of the work for us! Shallots, organic {if you can} canned crushed tomatoes, basil, water, salt and pepper go in and after 8 hours in the slow cooker the flavors are all married. At the end stir in some light cream, blend with an immersion blender and stir in some cooked tortellini just before serving. I garnished with a little fresh basil and being that its tomato soup, a little extra black pepper as well. The ease of this really makes it perfect for a weeknight meal!
