Its no secret, I am a HUGE fan of cooking up Mexican inspired meals at home. I love it all… tacos, nachos, quesadillas, salads. For me, many Mexican dishes are really brought to life with the different sauces or salsas like this amazing Salsa Verde. This Salsa Verde is such a bright and refreshing condiment and is so versatile.
My oldest son, who happens to be celebrating his 6th birthday today {ah!}, absolutely loves tacos and pretty much requests them every week. No objections from me because I love them too, especially now as the weather is warming so I can grill chicken and steak for them. Some warmed corn tortillas, grilled meat, this Salsa Verde, queso fresco and some cilantro.. that is my kind of taco!!
This Salsa Verde starts with halved tomatillos that are pan roasted to enhance the flavors along with a jalapeño. Blend up the tomatillos, jalapeños, green chilies, red onion, garlic, cumin, cilantro, olive oil, salt and pepper and thats it! Its so simple, so much cheaper then and tastier then buying jarred and is just perfect served with chips or grilled meats or shrimp. I love this stuff and hope you do too!
- 2 tomatillos, halved
- 1 jalapeño, sliced {seeds removed for less spice}
- 3 Tbsp olive oil, divided
- 4 oz can green chilies
- 1/2 a small red onion, quartered
- handful of fresh cilantro {I use a lot because I love cilantro!}
- 2 garlic cloves
- 1/2 tsp cumin
- 1/2 tsp salt
- 2 Tbsp water
- Heat a pan over medium high heat. Add in a Tbsp of olive oil, the jalapeño and halved tomatillos.
- Cook until the tomatillos and jalapeño have some good browning on them.
- Place all of the ingredients into a blender and blend until smooth.
- Refrigerate to cool.
