Fresh thyme is one of my favorite herbs, it has a citrus floral like flavor that pairs so perfectly with lemon. - 15 oz ricotta cheese
- zest of 1 1/2- 2 lemons
- 1/2 tsp fresh lemon juice
- 1 heaping tsp fresh thyme leaves
- salt & pepper
- 1 tsp Barbara EVOO
- sweet potato chips to serve
- To a bowl add the ricotta, lemon juice, lemon zest, thyme, salt & pepper.
- Stir to combine and add to a serving dish.
- Drizzle with the EVOO, garnish with a little extra pepper, thyme and lemon zest.
- Serve sweet potato chips or pita chips on the side.
