I hope you all had the most wonderful Labor Day weekend. With the unofficial end of Summer here I’ve been thinking of some Fall inspired meals. Today I’m sharing this colorful and delicious Harvest Salad with an Apple Cider & Honey Vinaigrette. It is so simple but everything just works really nicely together. A bed of baby spinach, granny smith apples, red grapes, dried cranberries, walnuts and some grilled Chicken from Perdue!
To me this one screams Farm to Family thanks to the Frozen, Fully Cooked @PerdueChicken. School is starting up tomorrow and following will be karate, soccer and hockey! We will have days that there is just no time for an elaborate meal but that doesn’t mean we can’t still have something healthy and delicious. The fact that @PerdueChicken doesn’t ever use antibiotics is a HUGE deal for me when i’m preparing a meal for my family. This salad is packed with fresh ingredients that I feel good about. Oh and I can’t forget the vinaigrette! Its super easy with just a few ingredients and adds just the perfect brightness to the salad.
- Perdue Simply Smart Fully Cooked Frozen Grilled Chicken Strips
- 1 bag baby spinach
- red grapes, cut in half
- granny smith apple, thinly sliced {tossed in lemon juice to prevent browning}
- dried cranberries
- walnuts, roughly chopped
- 1/3 cup apple cider vinegar
- 2/3 cup olive oil
- 1/8 cup honey
- salt and pepper to taste
- In a large skillet, add a drizzle of olive oil or olive oil spray and add the desired amount of chicken. Warm for 3-5 minutes.
- On a large platter or in a large salad bowl toss together the baby spinach, apples, grapes, dried cranberries and walnuts. Top with the grilled chicken.
- In a jar or small bowl combine the apple cider vinegar, olive oil, honey, salt and pepper. Add the desired amount of dressing onto the salad and toss to lightly coat.
