We’ve got just a few weeks until the official end of summer and around here it is certainly feels like summer with the heat and humidity. To me that means the BBQs are no where near ending and thats why I am sharing this classic, Italian Pasta Salad. Whatever it is you are grilling up; chicken, burgers, ribs… this one is easy and delicious!
Perfectly al dente short pasta tossed with pepperoni, fresh mozzarella, artichoke hearts, green bell peppers, black olives and roasted peppers. The dressing, well thats an easy one too, whatever your favorite brand of Italian Dressing. It doesn’t get much easier and check out those pretty colors! This is a classic because it is always a huge hit at parties. So lets soak up whats left of the good grilling weather and enjoy this bowl of yumminess!
- 2 lbs dry short pasta
- 2 bell peppers, small dice
- 1 stick {approx. 1/2 lb} pepperoni, small dice
- 1- 6.5 oz can sliced black olives, drained
- 4 cups quartered, marinated artichoke hearts, drained
- 8 oz pearl mozzarella balls
- 12 oz jar roasted peppers, thinly sliced
- 2 cups Italian dressing
- Cook the pasta to al dente, drain and rinse under cold water.
- Toss the pasta together with all of the ingredients until evenly distributed. Season with salt and pepper to taste.
