Creamy Skillet Corn with Bacon. Grab that summer sweet corn and make this incredible side dish. Its simple and so full of flavor… plus BACON!
Oh man, it has been a while since I’ve shared a new recipe hasn’t it? I always seem to struggle in the summer to keep up with things while also keeping the kiddos entertained. Do you all have trouble finding time to get things done over the summer as well? Theres always a playdate, a beach bumming day, time with the family, parties, bbqs… all fun and awesome I know but it sure does make the days fly by. Anyhow, I promise… I still have been cooking… most days anyway and I am thrilled to be sharing this one with you because it is SO GOOD!!!
New Jersey is known for many things… the beaches, that ridiculous MTV show {NO we are not all like that}, pork roll, Bon Jovi, Bruce, tomatoes and CORN! We have a local farm here near me that has the sweetest corn EVER and its something we look forward to ever summer. This Creamy Skillet Corn with Bacon is heaven in a pan!
There are just a handful of ingredients in this dish but of man, the flavors are perfection! It starts by crisping up some bacon so right there, we know this is going to be good because bacon does make everything better. I then go ahead and toss in some fresh corn cut from the cob until cooked just enough to be tender but still crisp. Stir in a little milk and cream cheese and finished with scallions. A little cracked black pepper if you’d like and thats it!
- 4 slices of bacon {reserve about 2- 3 tsp of bacon fat}
- 3 ears of corn, kernels cut off cob
- 2 oz cream cheese {i used light}
- 1/4 cup milk {i used fat free}
- scallions
- fresh cracked pepper
- In a large skillet over medium heat add in the strips of bacon and cook until crisp. Remove from pan and crumble once cooled a bit.
- Leaving about 2-3 tsp of the bacon fat in the pan, add in the corn kernels and cook until crisp but tender.
- Stir in the cream cheese and milk. Cook for a few minutes. to warm everything through. Finish with lots of fresh snipped scallions and pepper to your liking.
