This Tortellini with Butternut Squash, Spinach & Pancetta just looks like how Fall tastes doesn’t it? Starting with Italian pancetta infuses so much flavor into this pasta dish. The mild sweetness of the squash, the hearty spinach and those incredible cheese lovers tortellini. I can’t get enough of this one!
I think we all know how much I just adore pasta. I’m Italian, its in my blood. Pasta is comforting and so versatile with the endless types of pasta and incredible possibilities of flavor combinations. This Tortellini with Butternut Squash, Spinach & Pancetta is so flavorful and my family just loved it. This right here is what a Fall Italian inspired pasta should look like. Its hearty, great color and simple clean flavors.
While I start this recipe with browning pancetta, you can certainly skip that step and you’ve got yourself a vegetarian friendly meal. I happen to LOVE pancetta and lets be honest… me and kiddos definitely snacked a bit on that pile of crisp pancetta before adding it to the finished pasta dish. This meal basically comes together in just the one pan besides boiling there pasta.
I browned the pancetta in a little bit of olive oil then using a slotted spoon set it aside on a paper towel to absorb excess oil. To that pan of already so much goodness I added garlic cloves and diced butternut squash. So fragrant friends!! Once the squash is lightly golden and tender I then added in light cream and scrapped up all the bits of pancetta goodness from the pan. Once the cream is warm I add in the spinach and thats it! Toss in the par cooked tortellini, toss to coat and done! Sprinkle with the crisp pancetta and grated cheese and serve!
- 8 oz diced pancetta
- 2 Tbsp olive oil
- 3-4 garlic cloves, crushed
- 3 heaping cups diced butternut squash
- 8 oz bag spinach
- 1/2 pint light cream
- 20 oz Tortellini {I used Rana Cheese Lovers}
- some reserved pasta water
- salt & pepper
- Get a pot of water boiling. The fresh tortellini only take a about 4 minutes to cook.
- In a large skillet add the olive oil and pancetta. Cook until crisp. Using a slotted spoon remove and set aside on a paper towel.
- To the pan add in the garlic and squash. Season with salt and pepper. Cook until just tender.
- Go ahead and drop the tortellini into the boiling water. Cook just for 4 minutes, reserve some pasta water and then drain the tortellini.
- Stir in the cream, scrapping up the tasty bits off the bottom of the pan. Cook for a couple minutes then stir in the spinach.
- Add in the tortellini, toss to coat. Taste and season for salt and pepper to taste. If a little dry you can add a little bit of pasta water.
- Top the finished dish with the crisp pancetta and grated pecorino.
