Today I’m sharing with you a really simple meal that is not only easy to throw together for a weeknight meal but is super flavorful and vegetarian friendly too! This Chickpea Cauliflower Curry is spicy, filling and so tasty!
You guys, it has been so long since Ive posted a new recipe!! The holidays around here were fantastic! Crazy enough though I feel like things are not back to normal yet. We hosted 26 people for Christmas Day and clean up always takes a while, then New Years which is always pretty low key for us, followed by the kids going back to school for 2 days before we got the blizzard that gave them a 4 day weekend ANDDDD now I’ve had the oldest home with croup for the last 3 days! Phew! Through all the craziness we are on a mission to detox of the cookies and get our bodies healthy! So here is one very healthy tasty meal, Chickpea Cauliflower Curry!
While we were stuck in the house thanks to the blizzard that dumped 16″ of snow on us, I worked on a whole list of healthier meals/ meal prep lunch ideas for myself and my husband. Every year at work they do a weight loss challenge so I figured this is a perfect way to get both of us back on track after too many holiday indulgences. I’ve got some great things planned that I hope you all enjoy as well!
For now, this one! There are really just a handful of ingredients in this recipes but the flavors are big! I admit, sometimes I don’t venture out into other cuisines simply because I don’t know enough about them or that I just don’t want to go out an buy 17 spices that I not get enough use out of. So this one may not be like an Indian grandmas but thanks to the convenience of the grocery story I a curry spice packet all ready to go.
In this Chickpea Cauliflower Curry I sweated out some onion, garlic and cauliflower until slightly softened. I then added in canned {rinsed and drained} chickpeas, crushed tomato, some water and a packet of curry seasoning. Let everything simmer away until tender and just at the very end I stirred in light sour cream to mellow the spice level just a little and add just a hint of richness. I served it very simply with green beans and Texmati rice.
- olive oil
- 1 small head of cauliflower, rough chop florets
- 2 cans chickpeas, rinsed and drained
- 1/2 small yellow onion. small dice
- 2 garlic cloves, rough chop
- 1 cup crushed canned tomatoes
- 1- 1.6 oz curry seasoning packet
- 1/2 cup water
- 1 cup sour cream {you can use 1/2 cup cream as a substitute too}
- Basmati or Texmati rice cooked
- In a large skillet over medium heat, add a couple Tbsp of olive oil, the onion, garlic and cauliflower. Cook until slightly softened.
- Add in the chickpeas, tomato, curry seasoning packet and water. Simmer for about 20 minutes.
- At the very end stir in the sour cream or cream. Serve over rice and with some simple green beans.
