Apple Cinnamon Muffins

Perfect Apple Cinnamon Muffins. They are soft, moist and so flavorful! A wonderful Fall inspired breakfast or afternoon snack!
Apple Cinnamon Muffins
Happy Friday!!! Before you jump into the weekend make these! YUMMM!! Perfect for a quick grab and go breakfast! Ok don’t laugh but i’m going to tell you a funny story about these muffins. Mom brain as I call it sometimes gets the best of me and well what can I do but laugh at myself.  So, I tell Jack we’re going to bake a batch of fabulous apple cinnamon muffins. I proceed to peel and dice the apples then move to the fridge to get the butter out so I can sauté them briefly to soften them up. Voila, all that left is a Tbsp, certainly not enough to make a batch of muffins. Dilemma, Ryan (18 months) is napping and I honestly don’t feel like going back to the store again. I of course will not waste these lovely apples so I use the little butter I have, throw in some brown sugar and cinnamon and sauté the apples. Ok so I obviously got to the store and picked up butter to finally got to make up some muffins! They came out, in Jacks words, “these are delicious”… Jack is 3 and is of course always right!

approx 18 muffins
1 stick (melted, cooled) plus 1 Tbsp unsalted butter, divided
3 apples (I used gala), small dice
1 Tbsp brown sugar
1 Tbsp plus 1 tsp cinnamon, divided
2 eggs
3 cups flour
1 1/4 cups sugar
1 Tbsp baking powder
1/2 tsp salt
3/4 cup milk
Oven at 350 degrees.
For those lovely apples… In a sauté pan, over low heat, add in 1 Tbsp butter, the apples, 1 Tbsp cinnamon and the brown sugar. Stir to coat and cook until the apples are slightly softened, approx 10-12 minutes.
In the meantime, to a large bowl add the flour, sugar, baking powder, salt and 1 tsp cinnamon. Mix until well combined. Next mix in the apples.
Lightly beat the milk and eggs together. Add the milk and egg mixture as well as the melted and cooled  butter to the dry mix. Stir until just combined. Do not over mix, it will get tough.
Using an ice cream scoop divide the batter into a lined muffin tin. Bake for approx. 18 mins.
