Easy Baked Ravioli

September 13, 2012 by Angela LeMoine 2 Comments

Some days you just need an uncomplicated quick dinner and this one is just that! Easy Baked Ravioli is like a lasagna made super simple! Tasty, fun and throw together quickly any night of the week!

There are those days that I am so busy keeping the kiddos busy that meal time sort of creeps up. I threw together a super simple and quick lunch for the kids and it was a hit, so I figured i’d share in case other moms out there are looking for meal ideas! There is nothing fancy about it but so much better then the alternative of picking up take out and lets be honest, I ate them and loved it too!!

1 lb ravioli
1 can crushed tomatoes
1/2 a small onion, chopped
3 garlic cloves, sliced
1 tsp oregano
1/2 cup shredded mozzarella
olive oil
salt and pepper

Oven at 350 degrees.

This is a really basic and quick sauce. In a small pot, over medium low heat, add 1 Tbsp olive oil, oregano, onion and garlic. Sauté until softened. Add in the can of tomatoes, salt and pepper and simmer for 20 minutes.

Cook the ravioli until just shy of al dente, drain. Notice the too cute shapes?!?! Those are Jolie Ravioli, the kiddos get a kick out of them!

In a small baking dish ladle in enough sauce to just cover the bottom.  Lay the ravioli over the sauce in a somewhat single layer, no big deal if there is overlap.

Top with  little more sauce and finish off with the shredded mozzarella. Bake for 15 minutes then feed those hungry bellies!

HAPPY EATS!!!
