Tortellini with Italian Sausage & Broccoli

My go to when I need an easy dinner- pasta! This Tortellini with Italian Sausage & Broccoli is so tasty, really hearty and just a handful of ingredients! Great weeknight meal!
My go to when I need an easy dinner- pasta! This Tortellini with Italian Sausage & Broccoli is so tasty, really hearty and just a handful of ingredients! Great weeknight meal!
Looking for something quick and full of flavor… this pasta is a perfect filling meal on a budget! I absolutely LOVE pasta, all sorts, what Italian doesn’t.  And yes I partially blame my not losing weight as quickly as i’d like to on my carb addiction. So there it is, out there for all to know 😉 Normally I will pair sausage with broccoli rabe, I personally adore broccoli rabe, the hubs and kids not as much, so the substitution here. Either way this Tortellini with Italian Sausage & Broccoli is yummy and perfect to throw together during the week!

 
20 oz pkg fresh cheese tortellini
2 broccoli crowns, cut into florets
1 lb sweet italian sausage, casing removed
6 cloves garlic, sliced
1/4 cup olive oil
1 cup vegetable or chicken broth
In a pot of boiling water cook the broccoli florets leaving them still a bit crisp (mine are over cooked to make it easier for the kiddos to eat).  Remove from the water and reserve on the side.
Cook the pasta to al dente according to the packaging.
In a large saute pan, over medium heat, add the olive oil and sauté the garlic until fragrant. Add in the sausage and using a potato masher break up into large chunks. Cook the sausage about half way.

Add the broccoli and the broth and simmer for about 10 minutes. Place into large serving bowl.
Toss in the pasta. Season with salt and pepper.
