There might not be anything fancy about these Prosciutto Wrapped Asparagus Bundles but boy are they delicious! A great simple side dish.

Holy yumminess!!! Asparagus is one of my favorite vegetables and prosciutto, well I LOVE that stuff!!! I swear I must of eaten 2 lbs in a week the last time we were in Italy. I mean can you blame me, its so much better there and way cheaper! For these lovely Prosciutto Wrapped Asparagus Bundles, I wrap up several stalks of asparagus in a thin slice of proscuitto and roast them until the asparagus is tender and the prosciutto is crisp. These little bundles are absolutely delicious, look all fancy and are ridiculously easy!
1 bunch asparagus
1/4 lb thin sliced proscuitto
olive oil
pepper
Oven at 375 degrees.
Cut an inch to an inch and a half off the bottom of the spears. Mine were relatively thin so I grouped 5 spears together.
Lay the spears over a slice of prosciutto and roll them up.
Place on a lined baking sheet, drizzle with a bit of olive oil and season with pepper. DO NOT ADD SALT! When these cook the moisture is drawn out of the prosciutto and the salt is concentrated.
Roast for 18-20 minutes, until the asparagus is tender and the prosciutto nice and crisp.
