Broccoli & Pecorino Cakes
What to do when you have a bunch of leftover steamed broccoli?? Make some delicious and simple patties of course!!! These are really great for the kiddos too!!!! A handful of ingredients and help from Bisquick to get these light and flavorful Broccoli & Pecorino Cakes!!! These work as a great grab and go breakfast or as a healthy side dish for lunch or dinner! The best part, there is no oil used!!! I used my Cuisinart Griddle N Grill…. the large flat, non stick surface is perfect to cook these without the use of oil! I really do love this gadget!!

Broccoli & Pecorino Cakes
makes 12-15
1 cup Bisquick
2 eggs
2 cups rough chopped steamed broccoli
1/2 cup pecorino romano
1 tsp garlic and herb seasoning
1 Tbsp water
salt and pepper
Preheat the griddle (or large saute pan), I set it to 375 degrees.
Mix all the ingredients in a bowl until well combined.

I used a cookie scoop to get even sized patties. Pop the mixture onto the griddle and press down slightly to ensure they are an even thickness. Cook for a few minutes per side, until golden.
