When it comes to marinades for chicken I generally like a light an simple one. My favorite is a fresh garlic and herb marinade with the added brightness from fresh squeezed lemon! I allow the chicken to marinade for 4-6 hours to really allow the chicken to take on the wonderful flavors. This Quick and Easy Garlic & Herb Grilled Chicken Marinade will quickly become a new go to for grilling season!
Grilling I think might be my favorite cooking season. All the bright fresh flavors and just being able to spend more time outside. I don’t know about you but we are always so busy so easy recipes like this garlic & herb chicken marinade are a go to for me.
Quick and Easy Garlic & Herb Grilled Chicken Marinade
2 lbs thin sliced chicken breasts
1/4 cup fresh chopped parsley
6 cloves garlic, chopped
1 Tbsp dried thyme
1 Tbsp dried oregano
juice from 1 lemon
1/4 olive oil
Mix everything together in a baking dish. Coat the chicken on each side then allow to marinade in the fridge for 4-6 hours.

Lightly shake off any excess liquid and grill on a hot grill until the juices run clear, about 3-4 minutes per side depending on the thickness.
This Quick and Easy Garlic & Herb Grilled Chicken Marinade would work fantastically on grilled shrimp and steak as well! I sure love grilling season! Another fun idea… Cut the chicken breasts into cubes, use this same delicious marinade and make skewers! Layer the chicken with peppers and onions or cherry tomatoes and par boiled baby potatoes.
