Slow Cooker BBQ Tacos with Apple & Carrot Slaw

This heat wave has been seriously killer and I am so glad we are at the end of it!!! The heat absolutely puts a damper on cooking because c’mon, who wants to spend the day in a hot kitchen?!?! We’ve been to the beach 4 out of the last 9 days. I’m usually not a jump in the ocean person because its a bit chilly but when even at the beach it feels like over 100 degrees you need to cool off!

Anyhow, I love whipping out the slow cooker on these summer days. A few days ago I made these incredibly simple and delicious BBQ tacos with a cold apple and carrot slaw! A wonderful combo of the sweet and smokey Pastamore Kentucky Bourbon BBQ Sauce on shredded flank steak and the refreshing crunch from the apple and carrot slaw thats finished off with a little fresh lime juice! This is a great uncomplicated meal perfect for a hot summer day!
Slow Cooker BBQ Tacos
 
1 1/2- 2 lb flank or skirt steak
2 cups BBQ sauce
3 apples, peeled & grated
2 carrots, grated
1/2 red onion, grated
juice of 1 lime
scallion, sliced
corn tortillasThis really doesn’t get any easier! Pop the steak into the slow cooker with the BBQ sauce. Set to 5-6 hours on low and let it go. When done cooking go ahead and shred the meat with tongs or a couple forks and stir in with the sauce.I find it helpful to give the meat a little chop before serving to shorten the strands and make it easier to chew. photo photo1copy395_zpsa89db9f3.jpg

For the apple carrot slaw… Grate up the apples, carrots and red onion. Squeeze out as much of the liquid as possible. Squeeze in the lime juice, season with salt and pepper and stir in some sliced scallions.

Warm the corn tortillas and fill em up with that gorgeous shredded steak and top off with some slaw! YUM!!!

    Aren’t slow cookers just the greatest inventions. Put something in there for a while and suddenly it’s all cooked with little to no hassle. The tacos sound fantastic.
