Slow Cooker Pepper Steak

I LOVE a really easy and really delicious slow cooker dinner that the whole family enjoys and this Slow Cooker Pepper Steak is that! The flavors are so fantastic and the meat is so tender. You all are going to love this!

Yes I did it again… the slow cooker is getting lots of use lately! Really, whats not to love about the slow cooker, just about anything that goes in comes out yummy!

Hubby and I celebrated our 6 year wedding anniversary this weekend and “went away” for a night. I just finally got to the store today so dinner for tonight was one of those, lets see what we’ve got in the fridge sort of things. I had a london broil on hand and lots of bell peppers, so Pepper Steak it was and what easier way then throw it in the slow cooker before my zumba class this morning! This literally took 12 minutes to prep and get started! This is proof you don’t need a crazy amount of time or skill to have a delicious homemade meal every night!

Super tender lean beef, sweet peppers and onions and a wonderful sauce to pour all over top!
*the meat will shrink while cooking*

Slow Cooker Pepper Steak

serves 3

1 1/2- 2 lb london broil
4 bell peppers, mixed colors, sliced
1 large onion, sliced
4 cloves garlic
3 Tbsp soy sauce
3 Tbsp cornstarch
1 1/2 cups chicken broth- homemade if you have (its lighter in flavor then beef)
Salt & Pepper

Season the london broil with salt and pepper.

Place all the ingredients into the slow cooker. Stir to mix the cornstarch around. Set to low for 6 hours.

Once its done cooking, use a couple tongs to break up the meat. I left some nice larger pieces in there too! Taste and season with salt and pepper if needed. I served over brown rice.

    Did you brown the meat at all before placing in the slow cooker?

      In this recipe, nope. I just placed into the slow cooker completely raw. Thanks for stopping by!

    Leave the garlic cloves whole or minced?

      Sorry about that! Realize now I didn’t specify. I sliced the garlic cloves but minced would be ok too!

    This is a great recipe. The only thing that was missing was the spice factor (kinda sorta bland). I added a couple tsp. of red pepper flakes. I think next time I will use some sriracha.

      Nope, I put it into the crock pot whole. After it cooks, I shredded it because it is wonderfully fall apart tender.
