Halloween Cereal Bars

Hi, I’m Angela and I am a stress eater. Yup, adult life decisions stress me out easily and then I eat things I’ve cut out. The other night I went into my freezer, pulled out a few of my homemade oatmeal raisin cookies, popped them into the microwave and devoured them embarrassingly fast. Then today, rainy gloomy day and I got the urge to make a Halloween sweet treat. Definitely went all out here and threw in lots of yummy goodness. Honey nut Cheerios, peanut butter cups, Halloween sprinkles, marshmallows and dipped in chocolate! And yes I had a half for quality control 😉 and it was fabulous!!! These ooey gooey bars are a must!!! 

{a little tip for this one, read through the entire recipe first and have everything in place because the marshmallow mixture gets harder to work with if it sits}
Halloween Cereal Bars
makes 8 bars
3 cups honey nut cheerios
3 Tbsp butter
8 oz mini marshmallows
6-8 full sized peanut butter cups, roughly chopped
1/2 cup plus 3 Tbsp Halloween sprinkles
1/2 cup semisweet chocolate chips
Add the cereal, 3 Tbsp of sprinkles and the peanut butter cups to a bowl. 
In a small saucepan, over low heat, melt the butter then stir in the marshmallows. Continue to stir until the marshmallows are completely melted and the mixture is smooth. 
Pour the marshmallow mixture over the cereal and mix until combined. Press into a lightly buttered baking dish. Pop into the fridge for 15 minutes until cooled and set. 
Cut the cereal treats into 8 pieces.
Place a saucepan with a small amount of water just enough to cover the bottom, place a glass bowl on to. Keep the heat at the lowest heat. Add the chocolate chips to the bowl and stir frequently until the chocolate is melted. Shut the heat and remove the bowl from the pot. *Be sure to use a rubber or metal spoon, wood will add moisture and the chocolate will seize up*
Dip an end of each bar into the chocolate then into the sprinkles. Place onto parchment paper lined baking sheet and pop into the fridge just to harden the chocolate.
