Greek Roasted Potatoes

These Greek Roasted Potatoes are absolutely delicious!! A really simple recipe but so full of great flavor! 

I made these fabulous Greek Roasted Potatoes a few nights ago. They are a great simple side dish to go along side just about any piece of meat, like this Garlic & Herb Grilled Chicken!! YUM! What makes them Greek? They are tossed in salt, pepper, garlic powder and oregano; roasted to crispy perfection then finished off with fresh lemon zest! These potatoes are addicting!!! 

Greek Roasted Potatoes
 
3 russet potatoes, cut into wedges
olive oil
2 tsp salt
1 tsp black pepper
2 tsp garlic powder
1 1/2- 2 Tbsp dried oregano
zest of 2 lemons
Preheat oven to 425 degrees.
In a bowl, toss together the cut potatoes, enough olive oil just to coat, the salt, pepper, garlic powder and oregano.
Place the potatoes in a single layer of a couple of parchment lined baking sheets. Roast for approx 30-35 minutes until golden on the outside and tender on the inside. Half way through the cooking time switch the racks that the baking sheets are on to ensure a more even cook… so the potatoes that started on the bottom of the oven finish on top and vice versa.
As soon as the potatoes are out of the oven toss them with the fresh lemon zest and garnish with a little extra zest too.

    Switch the racks ??

      I think she means to take the baking sheet off one rack and switch it with the other baking sheet therefore switching the rack it was on. 🙂

    Oh I love anything to do with a potato, except mashed. I don’t like the texture. So consider this saved!
