Rocket Prosciutto Cups

Rocket Prosciutto Cups- they just sound amazing right?!?! If you are wondering what the heck I mean by “rocket”, well its just another name for arugula. These cups are another perfect New Years Eve hors d’oeuvre! Slices of prosciutto are baked until crisp, filled with baby arugula, diced tomato and fresh mozzarella. Drizzled with a bit of olive oil, a squeeze of lemon juice and some fresh cracked pepper. Beautiful, fresh and delicious; this one is a winner!!!

Rocket Prosciutto Cups
Ingredients
  • prosciutto slices
  • baby arugula
  • fresh mozzarella, small dice
  • tomatoes, small dice
  • olive oil
  • fresh lemon
  • fresh cracked pepper
Instructions
  1. Preheat your oven to 375 degrees.
  2. Spray a cupcake pan lightly with non stick spray. Press a prosciutto slice into each cup with the the prosciutto slice coming over the top a little bit {it will shrink}.
  3. Bake for 10-12 minutes until crisp. Remove from the pan and place onto a paper towel.
  4. Once cooled a bit and just before serving. Fill each cup with baby arugula. Top with the diced tomato and fresh mozzarella. Drizzle with a very little bit of olive oil, a squeeze of lemon juice and some fresh cracked pepper.
