Rocket Prosciutto Cups- they just sound amazing right?!?! If you are wondering what the heck I mean by “rocket”, well its just another name for arugula. These cups are another perfect New Years Eve hors d’oeuvre! Slices of prosciutto are baked until crisp, filled with baby arugula, diced tomato and fresh mozzarella. Drizzled with a bit of olive oil, a squeeze of lemon juice and some fresh cracked pepper. Beautiful, fresh and delicious; this one is a winner!!!
I want to wish you all a very Happy New Year!!! I thank you from the bottom of my heart for stopping by LeMoine Family Kitchen, for all of your amazing comments and support. It brings a huge smile to my face knowing that one of my recipes was made by all of you and shared with your friends and family. Looking forward to another year of food & fun!!
