Good morning friends!!! I know, I know, I’ve been missing for days! I don’t know about where you are but here in NJ the weather has been brutal and the germs are crazy! Lets just say I got in a whole lot of couch sleep and not so much cooking! Thankfully I recouped enough to enjoy my birthday celebration with the hubby in NY on Friday and with our family Saturday.
I did manage to make this bright, fresh, delicious Chickpea Salad. I don’t know about you, but I ate plentttyyyy this weekend and I always look forward to getting back to normal and lightening things back up! This salad has great color and great textures! Nuttiness of the chickpeas, crunch from celery and cucumbers, sweet tomatoes, bite of red onion and a basic dressing of red wine vinegar, olive oil, oregano, salt and pepper.
{Oh yea, so that Super Bowl game last night, I guess not so much of a game but hope you all still had fun with friends and family! While we were stuck home with our germs we still celebrated with some of our favorite picky foods… you can see those pics at the bottom of the post.}
Now for the pics of the Super Bowl Eats {I’ll be posting on the AMAZING nachos tomorrow!} we enjoyed & some from my birthday fun…
- 1 can organic chickpeas, rinsed and drained
- 1 cucumber, seeded and small dice
- 2 plum tomatoes, small dice
- 1 stalk celery, small dice
- 1 small red onion, small dice
- 1 tsp dried oregano
- 2 Tbsp olive oil
- 2 Tbsp red wine vinegar
- salt & pepper
- Add the chickpeas, cucumber, celery, tomato and red onion to a bowl.
- In a mason jar or something with a lid, add the oregano, salt, pepper, olive oil and vinegar and give it a good shaking until well combined.
- Pour the dressing overtop the veggies and mix to coat. Taste for seasoning.
