Healthy Oatmeal Peanut Butter Cookies

I’m on day 3 of the 24 day challenge and like I mentioned in my previous post, its going to be mostly clean eating recipes for the next few weeks. I’m feeling seriously fantastic already, I love doing the challenge every few months! I’ve been pretty darn perfect with the clean eating but today I was craving something a little sweet so I decided to make a healthier challenge friendly cookie! Sure, its not my heavenly S’mores Cookies, but these definitely hit the spot!!!! All thats in these: rolled oats, banana,  chia seed, organic vanilla yogurt, natural peanut butter and one egg! After we all gave them a try we agree, they are good on their own but a little drizzle of honey makes them great! I love me a little drizzle of honey! 

Being that these were sort of a last minute idea and my boys actually took a nap {we bribed them to sleep so we’d let them stay up for the Ranger game} I used what I had on hand. A lovely addition to these would be unsweetened dried cranberries or raisins. If you are worries that these are dry and boring because theres no butter, you’re wrong! The banana and vanilla yogurt keep them moist, the peanut butter & drizzle of honey are all the flavor and the oats add great texture! The chia seeds, well I love them! I use them in baking, in smoothies and today I made a chia pudding using almond milk, chia seeds and a meal replacement shake pouch; can’t wait to have it for breakfast tomorrow!

 

Healthy Oatmeal Peanut Butter Cookies
Ingredients
  • 2 cups old fashioned rolled oats
  • 1/4 natural peanut butter
  • 1/4 cup organic vanilla yogurt
  • 1 egg
  • 1 ripe banana
  • 1 Tbsp chia seeds
  • drizzle of honey to finish
Instructions
  1. Preheat your oven to 375 degrees.
  2. In a large bowl mash together the banana, yogurt, egg, chia seed and peanut butter until smooth and well combined.
  3. Stir in the oats until combined.
  4. Spoon out the mixture onto a parchment lined baking sheet. Will make 12 cookies.
  5. Bake for about 15 minutes until lightly golden. Cool on a rack.
  6. Drizzle with a little bit of honey once slightly cooled.

      Thanks Brandi!!!! Jack, my almost 5 year old loved them!!! The drizzle of honey definitely helps! I LOVE honey!!! Natures gold!!!

    Had some over ripe bananas laying around ( per usual at the end of the week) and tried this recipe. It’s awesome and even more great, it’s guilt free!
