Homemade Peach Pie

I am absolutely making the most out of local summer NJ produce! The kids have a fun time picking the fruit off the trees and I get to make this beautiful Homemade Peach Pie!!! If you haven’t had a fresh picked peach, you are missing out, the deliciousness is way beyond anything you get at the store. Besides that you get to eat this wonderful summer dessert, your house will smell incredible as it bakes!!! What else do I love about this Homemade Peach Pie, its easy and rustic… no need to worry about it being perfect with pretty edges, just enjoy and have fun making it!

The naturally sweet and delicious peaches don’t need much to complete the filling… a little bit of pure cue sugar, cinnamon and a bit of flour to hold it all together. The crust is simple and wonderfully tender; a combination of butter and greek cream cheese along with the typical ingredients of flour, sugar, a pinch of salt and some cold water. It all comes together quickly in a food processor with minimal kneading. The recipe for the crust makes a few batches worth. You can portion the extra out, wrap in plastic wrap, into a freezer bag and freeze for the next pie. This crust can also be used for a savory quiche or crostata, the sweetness is very mild.

One of my favorite things is fruit pies in the summertime! I love PEACH pie!! This brings back fond memories of cooking in my first kitchen with my mom. She came over to help me make a peach pie! <3
