Oatmeal Chocolate Chunk Cookie Sandwiches with Peanut Butter Buttercream

You need to make these Oatmeal Chocolate Chunk Cookie Sandwiches with Peanut Butter Buttercream ASAP! Seriously, add these ingredients onto your grocery list and get to the store. These cookies are absolute heaven!!! The cookies are packed with rolled oats, chocolate chunks and a perfect amount of cinnamon… a bit crisp around the edges and perfectly chewy on the inside! As if all that goodness wasn’t enough, these Oatmeal Cookies are sandwiched with a smooth and creamy peanut butter buttercream. All you need is a tall glass of milk and you are set! Close your eyes, take a bite and savor the deliciousness! 

I love family dinners, especially because thats a good reason to share something sweet at the end of a delicious meal. Tonight everyone is coming by for homemade Poutine!!!! Yes cheese curds are at it again, {I’ll be sharing the recipe of course!} this time on top of homemade fries and gravy! I’ve been dying to make some sort of cookie sandwich for a while now, and this was the perfect opportunity! No better way to share a good meal and heavenly dessert then surrounded by family and friends on a lovely summer night!

This recipe makes approx 5 dozen small cookies which gives you 2.5 dozen cookie sandwiches.
