Just a few days until Thanksgiving! Are you all ready? Is your menu set? Lists made and ready to cook? I’m excited because I personally think Thanksgiving is the best when it comes to food! If you are still looking for a vegetable side dish, look no further!! This 3 Cheese Kale Gratin is out of this world!!! Kale is such an incredible super food and cheese, well is just amazing goodness. Put the two together and you will be a rock star at Thanksgiving!!! 

When I was thinking of a green side dish, first spinach came to mind BUT while I love spinach, it shrinks way too much for a crowd. The kale is a great dark green and keeps its volume much more so. Its more of a hearty green that holds up really well to the longer cooking time in the oven.

The kale is boiled just for a bit to start the cooking process and get it tender. Drained very well then I stir in Boursin garlic & herb cheese, shredded fontina cheese and light cream. All that goodness goes into a baking dish, topped with a mixture of grated pecorino cheese and Italian seasoned breadcrumbs. A drizzle of olive oil then baked until bubbly and golden. 3 Cheese Kale Gratin

Ingredients
  • 32 oz bag of kale, rough chopped
  • 6.5 oz container of Boursin garlic & herb cheese
  • 8 oz fontina cheese, grated
  • 1 1/2 cups light cream
  • 1/2 tsp ground pepper
  • 1/3 cup grated pecorino cheese
  • 1/4 cup Italian seasoned breadcrumbs
  • drizzle of olive oil
Instructions
  1. Preheat your oven to 385 degrees.
  2. Bring a large pot of water up to a boil. Add the kale and cook for about 10 minutes.
  3. Drain the kale very well and place back into the same pot.
  4. Stir in the pepper, garlic & herb cheese, fontina and light cream until combined.
  5. Pour the mixture into a baking dish.
  6. In a small bowl stir together the pecorino and breadcrumbs. Top the kale mixture with the pecorino and breadcrumb, drizzle with a little olive oil.
  7. Bake for 35-45 minutes until bubbling and golden. Allow to rest for a few minutes before serving to allow it to set a little bit.
