Beef, Mushroom & Barley Stew {Plus my new Denby Cast Iron Casserole Pot} | LeMoine Family Kitchen #stew #beef #beefandbarley #winter #comfortfood #denby   Whats the weather been like where you live? This week has been incredibly cold! Driving my little guy to school Tuesday, yea with the wind chill it felt like 9 degrees! I’m not ready for that just yet. BUT… I am always ready for a big comforting pot of stew! I really enjoyed this one that I made a few nights ago; Beef, Mushroom & Barley Stew! Big tender fall apart pieces of beef, hearty baby bella mushrooms, carrots and barley all in a delicious broth! Absolutely fabulous meal! You will want to make this every weekend!  When it comes to dishes like stew, that require a good amount of cooking time, a great quality heavy duty pot is A MUST! I broke in that beauty with this stew! I mean that Azure color, its amazing right?!?!?! I really wanted to share this one with you all for a few reasons! This Denby Cast Iron Large Round Casserole is a great heavy duty pot and was perfect for this recipe! I can’t even tell you how excited I was when this one arrived at my doorstep, like Christmas morning! And I just might be adding several more of the coordinating pieces to my Christmas list for Santa! The quality is fantastic!!! The pot cooked nice and evenly and it was easy to get a good sear on the beef. That knob on the lid, not only is it really pretty, but it to is a great quality! I never understood why some of the cast iron brands but a junky plastic knob on there! This Denby Cast Iron Casserole is oven safe up to 480 degrees too- I’m thinking a homemade bread round would be perfect! Now lets talk cost! If you are like me, you hear cast iron and think oh geez who can afford several hundreds of dollars for a single pot?!? Not me friends, not me and not Denby!!! Beef, Mushroom & Barley Stew {Plus my new Denby Cast Iron Casserole}

Ingredients
  • 1 1/2 lbs cut beef for stew
  • flour for dusting
  • vegetable oil
  • 12 oz baby bella mushrooms, sliced
  • 3 carrots, peeled and cut into ~3/4 in pieces
  • 1/2 red onion, small dice
  • 2 garlic cloves, sliced
  • 14 oz can crushed tomatoes
  • 7 cups organic beef broth
  • 1 1/2 tsp dried thyme
  • 1 bay leaf
  • 3/4 cup barley
  • 3/4 cup frozen peas
  • salt and pepper
Instructions
  1. Heat up your pot oven medium high heat.
  2. Add the beef to a bowl and toss season with salt and pepper. Toss with just enough flour to lightly coat.
  3. Add a few Tbsp of vegetable oil to the pot. Brown the beef on the two largest sides and set aside in a bowl {cook in a few batches, you don’t want to over crowd the pot}. Add oil if the pot becomes dry.
  4. Once all the beef is cooked and set aside, go ahead and add in the mushrooms. Cook out the moisture until the mushrooms become lightly golden.
  5. Add in the carrots, onion, garlic, thyme, bay leaf and a little salt and pepper. Cook for a few minutes until the garlic is fragrant.
  6. Add the beef back into the pot along with the beef broth and crushed tomatoes.
  7. Simmer with the lid on, on the lowest flame, for about 2 hours.
  8. Remove the lid and simmer for another hour and a half.
  9. Stir in the barley and cook for another 30 minutes until tender.
  10. Stir in the peas and cook just until the peas are heated through.
  11. Season with any additional salt and pepper to taste.

    I got a cast iron dutch oven a couple of years ago and I use it all the time. One of my favorite kitchen tools!

      Kat, they are the best! I have an old expensive one from my bridal shower like 8 years ago… I don’t think ill ever be going back to the expensive brand. The Denby one is GREAT and so much more affordable!
