I know i’ve been a little MIA lately, my grandfather passed away so it has been a difficult week. Thanks so much for your patience! Also, if you aren’t yet a fan on Facebook, give us a “LIKE” to follow there… I share some oldies but goodies daily and some other blogger friends recipes as well! Today I’m back with this bowl of goodness! I’m going to be making these for Thanksgiving this year! Sour Cream, Scallion & Bacon Mashed Potatoes! Awesome flavors, period! 

I used yukon gold potatoes for these, they are my favorite! Cooked until for tender then mixed with a little vegetable broth, light sour cream, tons of sliced scallions and crisp bacon! Seasoned with salt and pepper to taste and thats it! The sour cream adds a really nice creaminess and a mild tang. The flavor combination  with the scallion and crisp salty bacon is really wonderful! Basically these are as awesome as a loaded baked potato {without cheese}!

    Angela, these potatoes look awesome. My husband and oldest daughter could eat plain old mashed potatoes every day of the week if I made them. These ones are more up my alley. Yum.
