I love a tasty salad, especially a good Caesar Salad with Homemade Dressing! There really isn’t much to a caesar salad… some crisp romaine lettuce, toasty garlic croutons, some fresh parmigiano reggiano and a simple Homemade Caesar Salad Dressing! So simple, so divine {even my 5 year old loved it}!
So what goes into making a homemade caesar salad dressing? Fresh garlic, an egg yolk, dijon mustard, lemon juice, fresh ground pepper, olive oil and parmigiano reggiano cheese. A blender does all the work for you and in under a minute you’ve got an incredible dressing that is going to be better then anything in a store bought bottle. Grill up some chicken or a fabulous steak, serve it over this simple caesar salad and you’ve got yourself a great meal!
- romaine lettuce
- garlic croutons {homemade are great if you have time}
- 2 garlic cloves
- 1 egg yolk, room temp
- 1 tsp dijon mustard
- 4 tsp lemon juice
- 1/4 tsp fresh ground pepper
- 1/2 cup olive oil
- 1/4 cup grated parmigiano reggiano cheese, plus extra to garnish
- Add the garlic cloves, egg yolk and dijon mustard to a blender or food processor. Blend until thick and creamy.
- With the blender running, slowly add in the olive oil. Blend until combined well and the dressing is creamy.
- Add in the lemon juice, pepper and cheese. Pulse a few times just to combine.
- If you want to make your own croutons, its super simple! Dice a small baguette, toss with a little bit of olive oil and garlic powder. Toast at 375 degrees for about 10-12 minutes until lightly golden.
