Tuscan Olive Salad

Tuscan Olive Salad | LeMoine Family Kitchen  Your favorite olives mixed with red bell pepper, celery, garlic and meyer lemon zest.

 

A few fresh and flavorful ingredients really brighten up plain jarred olives. This Tuscan Olive Salad takes just a few minutes to put together and tastes amazing! Olives are salty and perfectly paired with sweet red bell peppers, crisp celery, fresh garlic and those gorgeous strands on meyer lemon zest. Great colors, textures and flavors… this covers it all! 

There are so many great ingredients readily available out there.  You can find a wonderful variety of olives, either jarred or at an olive bar, at your local grocery store. I love taking olives, throwing in a few ingredients and creating something really wonderful! I’ve done one mix with olives, garlic, fresh basil and sun dried tomatoes. Another variety i’ve made with red onion, orange zest and parsley. Whatever you really love, go for it!

Tuscan Olive Salad

Ingredients
  • 1 heaping cup mixed olives {I used Kalamata and Sicilian}
  • 1 celery stalk, small dice
  • 2 Tbsp small diced red bell pepper
  • 1 garlic cloves, finely chopped
  • thinly sliced meyer lemon zest {regular lemons are fine too}
  • a drizzle of olive oil
Instructions
  1. Stir all the ingredients together in a bowl and allow to sit in the fridge for at least an hour, to allow the flavors to meld.
