Mango Salsa | LeMoine Family Kitchen. Bright, refreshing salsa with the perfect balance of sweetness and just a hint of spice.

I am so excited to share this post with you today! I have been waiting for 2 months to tell you about this top secret recipe post! This is a Freaky Friday Recipe Swap that I did with 18 of my blogger friends. We all were assigned a blog to cook/bake from and today we are ALL sharing our posts, and who we had! It’s been TOP SECRET and now I finally get to spill the beans and share this AMAZING Mango Salsa recipe from my friends over at Who Needs A Cape? with all of you.

While browsing through Who Needs A Cape? I came across some fantastic recipes like their Frozen Strawberry Margarita, Rice Pilaf, & Oven Roasted Ranch Potatoes… but there was something about their Mango Salsa that just grabbed me!  The colors are just incredible and the flavors are equally stunning!!! The sweetness from the mango pairs so well with the spice of the jalapeño, the sweet bell pepper and the red onion and cilantro add a great punch of flavor sound in more traditional salsas.

I served this Mango Salsa along with some blue corn chips but thankfully I had extra and topped a chicken cutlet with it for dinner the next night! This salsa would be amazing with some grilled chicken or fish tacos as well, its super versatile! If you are having a BBQ anytime soon, I definitely recommend you make this recipe.

Mango Salsa

Ingredients
  • 2 mangos, diced
  • 1 small red onion, diced
  • 1 jalapeno pepper, finely diced (more seeds = more heat, adjust accordingly)
  • 1 red bell pepper, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1/2 tsp salt
Instructions
  1. Cut all the fruit and vegetables to desired size and mix together.
  2. Add in the cilantro, lime and salt and toss until well combined.
  3. Serve immediately or store in an air tight container in the refrigerator up to 5 days.

    Mango salsa is so good! I never tried making it until this summer and now I can’t stop….I think I’ve made it three times already this month. 🙂 I’m always up for trying a new recipe!
