Who doesn’t absolutely LOVE a simple, easy clean up meal? Ive got this delicious One Pan Roasted Chicken, Sausage, Potato & Mushrooms recipe for you and it could not be any easier to throw together. Days are busy and with the holiday season approaching things are even busier. Rather then grabbing pre packaged foods for dinner, you can make a homemade meal like this one that is hearty and minimal effort!

I love these types of meals. You can feed the whole family, easily, inexpensively and its wonderfully hearty. Chicken thighs, sausage, fingerling potatoes, baby bella mushrooms and red onions seasoned with olive oil, rosemary, garlic powder, salt and pepper. You throw everything on the pan, pop in in the oven and let it just roast away until golden. I sprinkled a bit of fresh chopped parsley over top and thats it, bring it to the table and enjoy! The chicken is juicy the potatoes are creamy and those mushrooms are earthy perfection!

One Pan Roasted Chicken, Sausage, Potato & Mushrooms

Ingredients
  • 3 lbs bone in skin on chicken thighs
  • 2 lbs sausage {I used both sweet & spicy}
  • 1 1/2 lbs fingerling potatoes {I left the small ones whole and halved the larger}
  • 20- 24 oz baby bella mushrooms
  • small red onion, diced
  • 1/4 olive oil
  • salt, pepper & garlic powder
  • 5-6 sprigs fresh rosemary
  • fresh chopped parsley to garnish
Instructions
  1. Preheat your oven to 385 degrees.
  2. Place the chicken thighs {skin side up}, sausage, potatoes, mushrooms and red onion on a large baking sheet {or two smaller}. Drizzle with olive oil, salt, pepper, garlic powder. Push the rosemary sprigs into the mix, not leaving them right on top or they will burn.
  3. Roast for about 1 hour 25 minutes. Garnish with fresh chopped parsley.
