Hey pancake lovers, I have got such a special treat for all of you…. Strawberry Cheesecake Rollups!!! I know, luscious right?!?! In our home we LOVE making a special family breakfast on the weekends. With weekdays being so busy with school and work, our weekend breakfast time is so nice because we can start our day siting around the table together as a family.  Plus, without having to rush around anywhere I can get the kiddos in the kitchen with me to help make their favorite breakfast meal… pancakes! It is all about creating those memories because as we all know, time flies!

I had to run to Walmart the other day to pick up some stuff in preparation for Thanksgiving and of course I ended up grabbing things not on the list. Lets just say, I have food on the brain a LOT so while browsing around I was thinking of new breakfast ideas that the whole family would love and that would be super easy to make. My kids really love when I make crepes on the weekends but lets be honest, it can be time consuming and this time I wanted really easy. I picked up some Aunt Jemima Pancake Mix & Syrup and decided on this really delicious recipe idea. Lucky for me, it turned out great and everyone loved it!

The Aunt Jemima Pancake Mix really made my life a whole lot easier and worked perfectly. I made the batter a little thinner so that the pancakes could easily roll up and that filling, yeah its fantastic! The filling is easy peasy; strawberry jam, cream cheese, powdered sugar and chocolate chips… blended until smooth and thats done. These are absolutely delicious and the perfect simple meal to get the whole family around the table.

Strawberry Cheesecake Pancake Rollups

Ingredients
  • 2 cups Aunt Jemima Buttermilk Complete Mix
  • 2 cups water
  • 8 oz cream cheese, room temp
  • 1/2 cup plus 2 Tbsp strawberry jam
  • 2 Tbsp powdered sugar
  • 1/4 chocolate chips
  • butter for cooking
  • whipped cream & chocolate chips for garnish
  • Aunt Jemima Original Pancake Syrup
Instructions
  1. In a bowl add the cream cheese, strawberry jam and powdered sugar. Using a hand mixer, mix until smooth.
  2. Stir in the chocolate chips. Set aside.
  3. In a bowl mix together the Aunt Jemima Buttermilk Complete Mix and the water. Whisk until smooth.
  4. Add a bit of butter to a non stick pan and cook a large pancake until golden on each side. Place on a plate and wrap with foil to keep warm while you cook the remaining pancakes. {NOTE: you are looking for a thinner then usual pancake because they roll easier}.
  5. Add some of the strawberry cheesecake filling to each pancake and roll them up. Top with whipped cream and chocolate chips. Drizzle on some syrup to taste.
