Hey y’all! Can you believe that we are already nearing the middle of February? I’m not going to lie, as far as weather goes, I am SO done with the cold and snow. I’m training for my 3rd half marathon and let me tell ya, its not fun in 30 degree weather or with snowy/icy sidewalks. Well for now lets warm up with a fun and delicious dessert, the perfect sweet treat for the ones you love! These Valentine’s Day Sugar Cookies are really easy to make and they are so fun too! Whether you’re baking for a kids class party, to bring into the office for co-workers or just for yourself and loved one to enjoy by the fire… these are perfect!
I love these cookies for so many reasons. First off, the base is the same cookie recipe I always use for sugar cookies! Its not overly sweet, they are nice and soft on the inside and I just think the flavor is great. To make these festive for Valentine’s Day I added just a little red food coloring and some really cute heart shaped sprinkles. The dough comes together easily then rolled into a log and covered with sprinkles. Chill, slice and bake! Lets just say, I’m not a huge sweets lover but these, I can eat them all day!
- 2 1/2 cups flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1 1/2 sticks unsalted butter, room temp
- 1 egg
- 3/4 cup sugar
- 1 tsp red food coloring
- 2 Tbsp water
- 1 tsp vanilla
- heart shaped sprinkles
- Preheat your oven to 350 degrees.
- In a small bowl mix together the flour, baking powder and salt.
- In a large bowl, using an electric hand mixer, cream the butter and sugar well combined. Next add in the egg, vanilla, red food coloring and water and mix until light and fluffy.
- Add in half the dry ingredients and mix until just combined. Repeat with the remaining dry ingredients. Be sure not to over mix. You want the dough just combined, use a wooden spoon to incorporate any flour that didn’t get in there.
- Split the dough into 2 relatively even pieces. Roll each piece into a log on a piece of wax paper.
- Sprinkle a good amount of sprinkles on the wax paper and gently roll the dough over the sprinkles until nicely coated. No worries about covering every inch of dough!
- Wrap each log of dough in the wax paper and a piece of plastic wrap. Refrigerate for 20 minutes.
- Slice the dough into 1/2 inch slices and place onto a lined baking sheet about an inch apart from each other. {Keep the extra dough refrigerated until ready to bake}
- Bake for about 12 minutes or until the very outer edge is lightly golden.
- Cool on a cooling rack.
