Hey its Friday!!! This week has been so busy and it has just flown by! I am so excited to share this post with you today, especially because its been in the works for months and now I finally get to spill the beans about this top secret recipe post! This is part of a Freaky Friday Recipe Swap that I doing along with an amazing group of blogger friends. We all were assigned a blog to cook/bake from and today we are ALL sharing our posts, and who we had! It’s been TOP SECRET and now I finally get to share this fantastic recipe for Apple Chicken Salad from my friend Michaela from An Affair from the Heart.
I have to tell you, Michaela’s blog is one I have been following for a long time and I adore her recipes so choosing one to share with you all was not easy! I decided on her Apple – Chicken Salad because I think its perfect for the warmer weather when looking for something a little lighter to enjoy. Now back to this chicken salad… its fabulous!! A chopped salad with grilled chicken, celery, apples and almonds {Michaela used cashews but hubby can’t have them so I went with almonds}. The dressing is simple; mayo, honey and a splash of apple cider vinegar. The flavors and textures work so wonderfully together. I served the chicken salad in romaine lettuce leaves and truly enjoyed this dish!
- 2 cups diced grilled chicken {store bought rotisserie would be great too}
- 1/2 cup salted almonds or cashews, rough chop
- 1 apple, diced and tossed with a little lemon juice
- 1/4 cup chopped celery
- 1/4 cup honey
- 1/2 cup mayo {I used light}
- 1/2 Tbsp apple cider vinegar
- sakt & pepper to taste
- Whisk the honey, mayo and vinegar together in a small bowl and set aside.
- Toast the nuts by placing in the oven at 400 degrees for 5 minutes or in a dry pan over low heat. Cool, roughly chop them.
- Toss together the chicken, celery, apples and nuts.
- Pour dressing over, stir to combine. Chill.
