New Jersey has some incredible fresh produce, especially in the summer. I mean is there really anything that compares to the Jersey tomato or sweet sweet Jersey corn?! Right now is the time that our corn is super sweet and we just can’t get enough of it around here. Whether i’m grilling it, making a summer inspired Chicken, Corn & Kale Soup or a Mexican Corn Salad my family is crazy for corn! These delicious Corn & Chive Fritters are no exception!
I really love easy recipes like this one. Everything just gets mixed into a bowl then into a frying pan to get perfectly golden on each side. Fresh corn cut off the cob, lots of freshly snipped chives, flour, grated pecorino cheese {it adds a mild salty nuttiness}, baking powder, salt, pepper, milk and eggs. I love the fresh corn because it cooks just long enough to be tender but still has a great crunch. These are light, fluffy and so tasty!
I drizzle some {well, actually a whole lot} local honey from the local bee keepers From The Garden located in Freehold NJ. Their honey is incredible and they have the cutest store! You can find fresh flowers when in season, garden gifts, a variety of honey and bath & body products. Its a hidden gem in my opinion!
Lets get to this awesome recipe shall we?!
- 3 cups fresh corn kernels
- 2 heaping Tbsp freshly snipped chives
- 1 cup flour
- 1/3 cup grated pecorino cheese
- 1 Tbsp salt
- 1/2 tsp pepper
- 1 tsp baking powder
- 2 eggs
- 3/4 cup milk
- light olive oil for frying
- honey to drizzle
- Stir together the corn, chives, flour, salt, pepper, baking powder and pecorino until well combined.
- In a small bowl whisk together the eggs and milk. Stir into the dry ingredients until just combined.
- Heat a large frying pan over medium heat with just enough olive oil to coat the bottom of the pan.
- Using a small cookie scoop {like a small version of an ice cream scoop}, scoop a few fritters into the pan just like you are making a pancake. Cook for a few minutes per side until lightly golden.
- Test one out to make sure its cooked in the center- you may need to adjust the flame. Place the cooked fritters onto a paper towel lined dish just to soak up any excess oil. Continue cooking the remaining batter.
- Platter up the fritters and give them a generous drizzle of honey and some extra snipped chives.
