Here I am! See I din’t fall off the face of the Earth haha! We’ve been busy moving so I haven’t had much time to share new recipes. Today I am sharing a really flavorful and healthy Greek inspired chicken salad, Tzatziki Chicken Salad Wrap. This one makes for a perfect lunch or light dinner, especially great for warmer weather days. The homemade tzatziki sauce is really what makes this dish so fantastic!
I really love making different chicken salads. They are just perfect for a quick, easy and healthy lunch. You can serve it over mixed greens, in a sandwich, in a wrap or with a side of veggies. You can replace mayo is a basic chicken salad with mashed avocado, you can use a favorite salad dressing or as I did here, made with a Greek sauce.
Typically you’d find this sauce served with falafel {chickpea fritters}. For the tzatziki sauce I used a light sour cream as the base {you can use the more traditional plain Greek yogurt} mixed with fresh dill, lemon zest, garlic, cucumber, salt & pepper. Its bright, refreshing and so versatile. I used a store bought roasted chicken to make my life that much easier. Served very simply in a toasted whole grain wrap with romaine lettuce and sliced tomato.
Note: you’ll likely have some extra sauce. its great over grilled chicken!
- store bought roasted chicken breast, skin removed and diced
- 1 cup light sour cream or plain Greek yogurt
- 1 garlic clove, grated
- about 2 Tbsp grated cucumber
- 2 tsp fresh chopped dill
- zest of 1 lemon
- salt & pepper
- wraps
- romaine lettuce
- tomato, sliced
- Stir together the light sour cream or Greek yogurt, garlic, cucumber, dill, lemon zest, salt & pepper.
- Add enough of the tzatziki sauce to the diced chicken to coat.
- Toast a wrap then top with a couple pieces of lettuce, some slices of tomato and some chicken salad.
